Fresh Strawberry Muffins


I found this recipe on realmomkitchen.blogspot.com- it's simple and we delicious for our Valentine's Day breakfast!

Makes 12 perfectly! So scrape the bowl and fill 'em full and you'll have plump yummy muffins!

1/2 c butter softened
3/4 c sugar
1 egg
2 C flour
2 tsp baking powder
1/2 tsp salt
1/2 c milk
1/2 tsp vanilla
1 1/2 c chopped fresh strawberries
3 tsp sugar
1/2 tsp cinnamon

Heat oven to 400
Cream butter and sugar- add egg, mix well
Sift flour, baking powder, and salt into a small bowl
Add flour mix and milk alternatively to butter mix- add vanilla
Gently stir in strawberries
Spoon batter into muffin tins
Combine sugar and cinnamon- sprinkle over top of muffins
Bake for 18-25 minutes

(I have made these with frozen strawberries, well drained, and they turned out just as good (if not better due to the juices mixing in better with the batter) as with the fresh strawberries. The original recipe says that the day after the muffins are mush and gross but our were fine the next day- and I changed the time from 20-25 to 18-25 because at 20 mine are definitely done)
