BBQ Chicken Quesadillas

This is a new family favorite, and it's super easy!

1 Tbsp butter, softened
2 flour tortillas (8 inches)
3/4 cup shredded cheddar-Monterey Jack cheese
1 cup chopped cooked chicken breast (we boil ours, then shred it)
1/3 cup barbecue sauce

1. Spread butter over one side of each tortilla. Place tortilla, buttered side down, on griddle.
2. Sprinkle one side of each tortilla with 3 tablespoons cheese.
3. Combine chicken and barbecue sauce; spoon over cheese.
4. Sprinkle with remaining cheese.
5. Fold over and cook over low heat for 1-2 minutes on each side or until cheese is melted.
6. Cut into wedges.

Yield: 2 servings

I thought this was also a great way to use the leftovers of that baked BBQ Chicken that is Jessi's favorite and mom made all the time!

Oh and we never actually fried them, just put the chicken and cheese on the torilla and micrwaved until the cheese melted then added sour cream, ranch,....
