Devin and I always make our enchiladas this way- it's super easy and I've never thought twice about it but anytime we make them for someone else they say they are really good- so either everyone is lying or they are good! We like them and it's SIMPLE
Beef Enchiladas
1 lb. ground beef
1 can enchilada sauce- your choice
6 tortillas
shredded cheese
1. Brown beef, adding 1/4-1/3 of the enchilada sauce for last few minutes
2. Line the bottom of an 8X8 with enchilada sauce
3. Slightly warm tortillas so they don't tear when rolling
4. Place spoonful of meat mixture in center of tortilla
5. Top with desired amount of cheese
6. Roll up and place in pan, repeat until there is no more room in pan
7. Pour remaining enchilada sauce over top of tortilla rolls
8. Sprinkle with desired amount of cheese
9. Bake at 375 for 10-15 minutes
Chicken Enchiladas
1 lrg chicken breast (or 2 med/small)
1 can enchilada sauce
1 can bean paste (refried beans)
6 tortillas
cheese
1. Boil chicken until cooked through and shreds easily
2. Shred chicken and place in pot with bean paste and 1/4-1/3 of enchilada sauce
3. Mix while heating until warm
4. Line bottom of 8x8 with enchilada sauce
5. Slightly warm tortillas and place a spoonful of meat mixture in the middle
6. Sprinkle with desired amount of cheese, roll up, and place in pan
7. Repeat until there is no more room in pan
8. Pour remaining enchilada sauce over tortilla rolls and sprinkle with cheese
9 Bake at 275 for 10-15 minutes
